It’s finally summertime! You know what that means…lots of cookouts and BBQ’s, with plenty of cheeseburgers, dogs, and mayo-heavy potato salads. Here’s a lightened up burger recipe that we think you’ll just love. You’ll be reducing calories and fat, but we promise you won’t miss out on any flavor!!
- 1 lb lean ground chicken
- 1 egg, beaten
- 5 oz frozen spinach (half a block), thawed and drained of excess liquid
- ¾ cup shredded mozzarella cheese
- ¼ cup roasted red peppers, sliced into thin strips
- 1 tsp salt
- Pinch of pepper
Mix all ingredients together and make 4 patties. Grill burgers until meat is completely cooked through. Enjoy on a toasted whole wheat burger bun, or “in the grass”! (On a bed of lettuce) .
This burger recipe is very customizable. Want to use ground turkey? Go right ahead! Think feta cheese would be delicious? You bet it would.
